Father Dean Bell and his two sons Joshua and Joseph Bell began business on Monday 27 February on 12 Guildhall Street.

Joshua Bell started the idea of the family business three years ago after developing a passion for bagel-making.

The menu offers bagels including ‘The Essential’, a classic bagel with crème cheese for £3.79, ‘The Bla Bla’, with thick cut bacon, mozzarella, cheddar, Dijon mustard and olive oil for £6.99, and ‘The Full English Bagel’ with bacon, sausages, fried egg and sliced tomato for £7.99.

It also includes cold drinks, coffees, teas and milkshakes.

Most of the bagel recipes have been named after jazz musicians.

Joshua said: “I felt like there was a really large gap in the market in Lincoln for a lunch place that wasn’t a fast-food chain. Something that felt like a coffee shop, but primarily served food.

The sleek and sophisticated interior

“We’ve had a great response. There’s been so much foot traffic. Pretty much every single day when we were open last week, we sold out in about two hours, and we’ve been doubling ever since. The location is perfect.”

Joshua also hopes to expand the business to other locations around the country.

“Since the beginning of 2020 I was doing batches every day, trying to perfect the recipe. I couldn’t stop, I loved it.”
